Kulfi is our family Favourite. Just saying the word “Kulfi” itself will make me dribble and I will not stop licking my lips for the next few minutes (Actually Hours!). But, I am sure the Kulfi – Store bought would definitely have some preservatives and cream or condensed milk in it.
Warning : Contains Nuts and High in Fat as Whole milk is used in the Recipe, Refer the Note for Nut Free Recipe.
Ingredients you need:
- Whole Milk – 2L
- Sugar – 2 Cups
- Pistachio – 10 Nos
- Almond – 20 Nos
- Cashew Nut – 10
- Cardamon – 5 pieces
- Saffron – A few
Preparation:
- Take 20 Almonds, mix with little milk and make a paste.
- Chop all the nuts into small pieces, Better not to grate them so you don’t loose the Crunchy effect.
- Powder the Sugar and Cardamom and keep it aside.
- Bring the Milk to boil in a Non-Stick Pan and then Simmer it
- Keep stirring the Milk until it reduces to half of the original quantity.
- Now add the powdered Cardamom and Sugar Mixture to the milk.
- Mix Thoroughly and then add the chopped nuts and saffron.
- Let the milk reduce to 1/4th of the original quantity. (The milk will change the colour from White to Light Yellow)
- Allow the mixture to cool down completely.
- Pour them in the Ice cream Mold or you can use freezer safe cups.
- Leave it in the freezer for atleast 4 hours before consuming – Overnight will give the best result

Notes
- You should use Whole Milk for the recipe.
- Better to use the normal /unsalted Pistachio.
- Chop the Nuts into small pieces and don't grate (Choose the Nuts as you like)
- You can replace the Nuts with Fruits like Raisins, Apricot chunks, Dried dates.
- You can have a mix of Nuts and Fruits too.
- Keep stirring the milk once it is boiled to avoid milk sticking to the bottom of the Pan
